Pan-Seared Salmon with Lentils and Spinach [serves 4]
π 1 1/2 lb salmon, cut into fillets
π 1 Tbs olive oilβ β β β β β β β β
π 1 lemonβ β β β β β β β β
π 2 cups spinach, packed
π 1 1/2 cups lentils, canned (or another legume)β β β β β β β β β

β‘οΈ Heat a medium non-stick skillet on medium heat. Drizzle with oil.β β β β β β β β β
β‘οΈ When the pan is hot, place salmon fillets in the pan skin side up. Cover the top and let them cook for about 4 minutes then flip and cover until cooked throughout.
β‘οΈ Remove from pan and add spinach and lentils - heat over low until spinach just wilted and lentils are warmed through.β β β β β β β β β
